Key Responsibilities
- Bone out carcasses and quarters independently, removing bones accurately and producing commercial beef/veal, lamb/sheep and pork cuts while protecting yield and quality
- Prepare sliced and trimmed products to customer and production specifications
- Trim off excess fat, gristle and unwanted material, keeping waste to a minimum and quality consistent
- Carry out species-specific slaughter floor tasks: stunning and shackling where authorised, sticking and bleeding, hide removal or skinning, carcass dressing and evisceration
- Keep to safe food handling practices
Requirements & Eligibility
- A background as a commercial meat worker
- Practical skills specific to your role
- Strong knife skills, accurate bone removal and trimming ability (for boners)
- Able to set out your species experience, cuts and duties
- A verifiable employment history and references, where available
- Q Fever vaccination or immunity evidence, where required for the role
- Any qualifications and skills assessments, if available
