Breakfast service is its own discipline: early starts, fast tickets and eggs that have to be right every time. A growing hospitality business in Wollongong wants a Breakfast Sous Chef to run its morning kitchen alongside the Head Chef.
You would lead a small brigade, train junior cooks, develop breakfast menus and seasonal specials and sharpen the systems that get each service off to a clean start. Sponsorship is available for the successful candidate.
Your CV should cover the brunch and café menus you have cooked, the size of team you have led and the kitchen systems you have improved. Put your brunch kitchen leadership into a Build AI CV to present it clearly.
Key Responsibilities
- Take charge of the morning kitchen and make sure prep and service hit a high standard
- Back the Head Chef on how the kitchen runs and where the food is heading
- Manage up to five breakfast chefs and bring junior cooks on
- Create and fine-tune the breakfast menu and seasonal specials so every plate looks and tastes the same
- Get the day's mise en place finished before doors open
- Look after ordering, stock rotation and waste
- Keep hygiene, food safety and cleanliness tight
- Hold the line during the morning rush and find better ways of working
- Help out across the kitchen and keep the crew respectful and keen
Requirements & Eligibility
- Minimum 2–5 years' experience in a Sous Chef or senior chef position
- You have worked in kitchens built around breakfast or brunch
- You know modern Australian breakfast and café-style cuisine inside out
- You have supervised or led a kitchen team and can train, mentor and motivate junior chefs, speaking with confidence
- Your prep and plating are strong
- You understand food safety and kitchen hygiene rules
- You have handled stock control and ordering and kept food waste down
- You stay organised and manage your time well
- You thrive in a busy service and do not mind early morning starts
- You are professional, reliable and a team player who wants a long-term career in the Australian hospitality industry
