A small brigade means everyone matters, and this Canberra kitchen has 2 places for Chefs or Cooks who can pull their weight. The menu mixes European cooking with modern Australian dishes, all made to a consistently high standard.
Nobody hides in a team this size. Some nights you will own one section, other nights you will jump between stations, and the roster covers evenings, weekends and split shifts. Expect your papers and references to be checked. Visa sponsorship is available for the successful candidate.

Key Responsibilities
- Cook European and modern Australian dishes to a consistently high standard
- Run your allocated section in service and support other sections when needed
- Get daily prep done quickly and accurately, keeping presentation, portions and quality steady
- Work closely with the small team so busy services run smoothly
- Follow set recipes, methods and kitchen standards
- Watch stock and ingredient use to keep waste down, and maintain hygiene, cleanliness and safety
- Be dependable across evening, weekend and split-shift services
Requirements & Eligibility
- Holds Certificate III in Commercial Cookery or higher; a relevant trade qualification in Commercial Cookery
- Minimum 2 years of professional cooking experience in European or modern Australian cuisine
- Background in a fine-dining or quality-focused commercial kitchen
- Chef de Partie or section-level experience is highly regarded
- Strong all-round cooking and food preparation skills
- Able to run a kitchen section on your own
- Proven ability to keep food quality high while controlling waste
- Solid knowledge of food safety, hygiene and kitchen procedures
- Happy in a compact professional brigade and free to work evening, weekend and split-shift rosters
- Your qualifications and work history must be genuine and verifiable
