Chef

Visa sponsorship

Hospitality · Sydney, NSW, Australia · Full-Time · $80,000 - $85,000/yr · Visa: Employer sponsored

Inner Sydney after dark is the stage for this Chef role: one venue with an upmarket Italian-Mediterranean restaurant, an open-air terrace cocktail bar and a late-night club lounge. The post is permanent and full time in a kitchen that rarely slows down.

Everything is shared plates built on top Australian produce: think crudo, fritto misto, pasta made in-house, the day's fish and cuts of wagyu. Dinner is only part of it, since the kitchen also feeds weekend brunch crowds, private parties, big events and the bar crowd late at night. Australian citizens, permanent residents and people on an eligible visa can all apply, and qualified chefs who meet every Home Affairs requirement may be considered for TSS 482 sponsoring. Applications close on 8 November 2026.

List your cookery qualification, the sections you have run and the function or event menus you have delivered. Then write a Sydney Mediterranean late-night kitchen CV with Build AI CV so the head chef can match you to the brigade.

Key Responsibilities

  • Turn out antipasti, fresh pasta, grilled meat and seafood that match the recipe and look the part on the plate
  • Look after your section through packed dinners, brunch at the weekend and the late shift
  • Do the mise en place each day, keep an eye on freshness and FIFO, work out what the kitchen will need and place orders when asked
  • Support set menus, feasting options and upmarket canape spreads for group bookings and whole-venue hires
  • Keep to Food Safety Standards Australia and HACCP, plus hygiene and safety at work
  • Guide and coach commis chefs, apprentices and kitchen hands
  • Cover a rotating roster with late nights, weekends and public holidays
  • Help the brigade cope with large event catering

Requirements & Eligibility

  • AQF Certificate IV in Commercial Cookery, or a matching culinary qualification gained overseas that is equivalent and relevant
  • Minimum 1 year full time since qualifying, in a busy high-volume restaurant, a Mediterranean or Italian kitchen, or an upmarket venue
  • Solid grounding in modern Mediterranean or Italian food, line prep and big-volume service, holding the standard when the rush is at its worst
  • Strong skills in communication, running a team and staying organised
  • Happy to do late nights (post-10pm weekend trade) and split shifts
