Bistro service at lunch, a sporting lunch one day and a charity event the next. That is the range a Brisbane hotel needs from its new Head Chef / Kitchen Manager.
You would lead the kitchen across bistro dining, bar meals and a functions and events side that keeps getting bigger, set the menus and balance great food with sound commercial results. The job covers building a positive kitchen culture, costing modern Australian menus, planning events with the functions team and keeping purchasing, stock, labour and waste within budget, while staying hands-on in service. Sponsorship is available for the right candidate.
