Key Responsibilities
- Own the kitchen's performance and the running of each day
- Lead, coach and develop the kitchen brigade, building a positive team that takes responsibility
- Create modern seasonal menus and bring them into service, using Japanese techniques and Asian-inspired flavours where they fit
- Hold taste, quality and presentation steady so every dish meets the house standard
- Organise prep and service during high-volume trade
- Watch food costs, stock and kitchen budgets and handle ordering and supplier relationships
- Keep food safety, hygiene and workplace compliance up to standard
- Find ways to make kitchen systems run more efficiently
Requirements & Eligibility
- Proven track record as a Head Chef or Senior Sous Chef
- Demonstrable experience in a modern, high-end or premium kitchen
- Japanese, Asian or fusion cuisine experience is highly desirable
- Clear evidence of kitchen leadership and team supervision
- Experience developing menus and seasonal food concepts, and managing stock, food costs and kitchen operations
- Strong knowledge of food safety and hygiene
- Strong communication and team development skills
- Performs well in busy service, with close attention to detail and presentation
