Commercial Japanese cooking experience is the main ask for this Japanese Chef role with a growing Melbourne team. The kitchen is focused on evening service, and the employer values dependable, positive people who work well with others as much as technical skill.
You would cook Japanese dishes to the kitchen's recipes and methods, handle mise en place and evening prep, and keep plating and portions steady through busy periods, with careful hygiene and ingredient handling throughout. This role is open to applicants already in Australia with valid work rights, and sponsorship is available for the right onshore candidate if a suitable full-time position becomes available.

Key Responsibilities
- Prepare Japanese dishes following the kitchen's recipes, methods and standards
- Complete mise en place and pre-service prep, keeping evening preparation efficient, and help with stock prep and kitchen organisation
- Keep food quality, plating and portions consistent
- Support the team at busy times while maintaining hygiene, cleanliness and proper ingredient handling
- Communicate well, accept instructions, feedback and training positively, and stay dependable and respectful across your rostered shifts
Requirements & Eligibility
- Minimum 2 years of relevant Japanese cuisine or professional kitchen experience
- Practical cooking skills from a commercial kitchen, with genuine understanding of Japanese food prep and kitchen operations
- At ease in fast-paced service, staying calm and organised
- Turns up reliably and takes personal accountability, with a professional attitude and good discipline
- Communicates respectfully and works well in a team
- Open to learning, training and adapting to workplace requirements
- Looking for a stable, long-term career in hospitality
- Valid Australian work rights required
