Key Responsibilities
- Support the Head Chef in running the kitchen day to day and take responsibility for performance in busy services
- Organise prep so the pass runs smoothly, and coach and direct junior and senior cooks
- Deliver consistently high-quality dishes with correct recipes, portions and plating
- Help with ordering, monitor stock, control food costs and cut waste
- Uphold food safety, hygiene and cleanliness
- Contribute menu and seasonal ideas, keeping modern classics, premium proteins, seafood and pub-style dishes consistent, and work with management and front of house for a respectful, productive kitchen
Requirements & Eligibility
- Demonstrated experience as a Sous Chef or experienced senior chef
- A solid background in a high-volume pub, bistro, restaurant, or comparable kitchen
- Proven hands-on cooking and food preparation ability
- Shown ability to lead a kitchen team through busy services
- Strong understanding of food quality, presentation and consistency
- Practical experience with stock control, ordering, food costing and wastage management
- Good working knowledge of food safety and hygiene
- Works efficiently under pressure, with strong leadership and communication and a reliable, professional approach
- Able to demonstrate and verify genuine culinary employment experience; documented and verifiable chef experience is encouraged
