Fresh pasta made by hand is at the heart of this long-established Italian kitchen in Melbourne, and it is looking for a Sous Chef, or a strong Chef de Partie ready for the step up. You would be the Head Chef's right hand, with genuine say over daily operations, team development, specials and the direction of the menu.
Expect to plan daily prep and hand out tasks, keep pasta dishes and presentation consistent, watch the flow through peak service, cover sections when needed and run the kitchen when the Head Chef is off. Training junior staff and helping with stock are part of the job too. Visa sponsorship is available for eligible applicants.

Key Responsibilities
- Help lead and organise the kitchen each day, taking charge when the Head Chef is away
- Support hiring, training and development of junior staff
- Oversee fresh pasta production and service
- Plan the daily prep, delegate tasks and keep preparation and plating consistent
- Keep an eye on workflow and service during peak times, covering other sections when required
- Put forward creative ideas for specials and menu development
- Keep the kitchen clean, safe and orderly, and help manage stock and ingredients
Requirements & Eligibility
- Strong skills in making fresh pasta
- 2–3 years of Sous Chef experience, or proven readiness to step up from a senior Chef de Partie position
- Has supervised or supported junior chefs, with strong leadership and communication
- Can run a fast-paced kitchen, organising and delegating well
- Highly reliable and professional
- Focused on food quality and consistency
