Key Responsibilities
- Keep the kitchen running daily and be the one in charge whenever the head chef is away
- Write and cook menus and daily specials priced to hit the gross profit target
- Lead the brigade: hire below management level, train, set rosters and manage performance
- Deliver the kitchen's numbers on budget, from cost of sales to labour and margin
- Order stock and handle suppliers on budget, keeping stock counts accurate and waste low
- Uphold food safety, the kitchen's food control plan and its written systems
- Report on how the kitchen is performing
Requirements & Eligibility
- Level 5 National Diploma in Hospitality (Kitchen Management)
- A minimum of 3 years spent in kitchen management
- Skills in budgeting and costing, plus strong organisation and time management
- Outstanding knowledge of food and beverage, both local and international
- Comfortable with IT and cloud-based software, email, Word and Excel included
- Entitled to work in New Zealand
