Sous Chef
Visa sponsorship
Hospitality · Queenstown, New Zealand · Full-Time · $37/hr · Visa: Employer sponsored
If you have run a section or two in a busy hotel kitchen and fancy the step up to second-in-command, this Queenstown post deserves a look. A premium hotel in the middle of a transformation needs a Sous Chef to help steer a brigade cooking for several restaurants and bars under one roof.
It is permanent and full-time, with a floor of 40 hours a week. The hotel welcomes applications from New Zealand residents and from overseas, and it can sponsor the right candidate on an Accredited Employer Work Visa (AEWV).
Day to day you would sign off every plate leaving the pass, keep the rota covered, bring on junior chefs and keep a close eye on ordering, par levels and waste.
Before you apply, make sure your CV shows the outlets you have looked after, the volume you cook for and your food safety training, then tidy up a multi-outlet sous chef CV with Build AI CV.
Key Responsibilities
- Run food production for every kitchen outlet in the hotel and sign off each dish before it goes out
- Check prep, mise en place and stock rotation on each section so the team is set before service begins
- Watch the rota, hand tasks to more junior chefs and jump onto a section to cook and plate when it gets busy
- Hold food costs down through sensible ordering, par levels and rotation, cutting waste and spoilage in the stores
- Recruit, coach and develop kitchen staff, building a calm and productive brigade
- Keep the kitchen spotless and safe under WHS guidelines, food safety rules and the hotel grooming standards, working hand in hand with the F&B Manager, outlet supervisors and front-of-house
Requirements & Eligibility
- You must hold a relevant trade qualification such as a Certificate in Cookery Level 4 or equivalent, or bring a minimum of three years of relevant experience as a Sous Chef or senior chef in a comparable kitchen
- A track record of running kitchen operations across multiple outlets in a premium hotel or restaurant
- Sharp technical cooking ability and the consistency to hold high standards on every service
- Experience leading, training and growing a kitchen team and confidently managing daily operations, plus a firm grasp of food costs, stock control and kitchen financial targets
- A current Food Safety certificate and thorough working knowledge of WHS in a commercial kitchen
- Happy to work a rotating roster that takes in evenings, weekends and public holidays
