Can you keep a tandoor roaring through a packed Saturday night? An established, professional hospitality group in the Sydney CBD wants an experienced Tandoori and Curry Chef who knows Indian cooking inside out.
Tandoor work and curry preparation sit at the heart of the job, along with the pace of high-volume restaurant service. You would run the tandoor section, turn out breads, kebabs and tikka, cook a broad spread of authentic and modern curries, and keep portions, presentation and hygiene tight. You will also get a say in menu development and new dishes, and help bring on junior cooks. The job is full-time and stable, and sponsorship is available for the right candidate.

Key Responsibilities
- Run and manage the Tandoor section
- Make naan, roti, kebabs, tikka and other tandoori dishes
- Cook a wide range of traditional and contemporary Indian curries
- Prepare marinades, gravies, sauces, stocks and mise en place
- Keep consistency, portion control and presentation spot on, even in high-volume service
- Uphold food safety and kitchen hygiene, control wastage and help manage stock
- Contribute to menu development and new dishes
- Train and support junior kitchen staff
Requirements & Eligibility
- Minimum 5 years' relevant experience
- Strong experience on the Tandoor and Curry section
- Excellent knowledge of Indian spices, marinades and cooking techniques
- Experience in a busy, high-volume restaurant
- Strong knife and prep skills
- Able to keep quality and consistency high under pressure
- A good understanding of food safety and hygiene
- Reliable and professional, with strong teamwork and communication
- Available to work evenings and weekends as required
